After pressing the whole grapes, the first and best must is left to ferment in stainless steel tanks at a controlled temperature.
Il vino si affina sulle proprie fecce per 10 mesi con batonage ripetuto con frequenza settimanale. Dopo l’imbottigliamento il vino affina 6-8 mesi in bottiglia prima della messa in commercio

The Sauvignon vineyards are located in the municipality of Treiso, Rocca parcel, and in the municipality of Trezzo Tinella, where, in the coolest and north-east exposed part, we have planted French clone sauvignon.
